Curried Couscous


Couscous is one of the ingredients that I have no experience on cooking. When I was in culinary school, I didn't get to handle starch section. I have always been the person who handle the salads and vegetables. So, when I found a box of couscous from a local bakery, I was excited to try them.

The first time I cook with couscous, I followed the instruction from the box. It was simple. Melt some butter, add in couscous and stock. Ta-dah! It's done. But, it was bland. So, I decided to experience with something else. Curried Couscous.

Curried Couscous

Ingredients:
2 tsp oil
1 medium onion, chopped
1 clove garlic, chopped finely
1/2 tsp curry powder
3/4 vegetable/chicken stock
1/2 cup couscous
1/2 cup prawn
1 stalk of curry leaves
salt and pepper to taste

Preparation:
1. Heat oil over medium heat and stir in onion, garlic and curry leaves until fragrant. Add in curry powder. Be careful not to burn the powder.
2. Pour in stock and prawn into curry paste and bring to boil. Then, stir in couscous and cover the lid for five minutes. Add in salt and pepper to taste.
3. Fluff couscous with a fork and transfer to a bowl and it's ready to serve.
