Baked Mushroom with Eggs


Good morning dear readers!

I love watching Mrs.Hoshizawa in Dosanko Cooking. In fact, I always watched her show while having my breakfast in the morning. Mrs. Hoshizawa had lots of simple and good looking recipes. And it was good to learn a few cooking tips from her.


So, when I saw this baked mushroom with egg recipes from her, I was determined to try them. I love mushrooms! And that melted cheese on top tempted me to try this. So, I made this baked mushroom with egg with a bit of adjustment for the recipe to suit my available ingredients.


Baked Mushroom with Eggs

2 cups of any fresh mushroom (you can use two types of mushroom)
1 large onion, sliced thinly
1 tbsp butter
2 large eggs
2 tbsp mayonnaise
2 tbsp milk
2tbsp soy sauce
Salt and Pepper to taste (don't use too much salt as you can get that saltiness from soy sauce)
1 cup shredded cheese, any type (I used mozzarella and cheddar)

1. Cut the roots off the bottom of the mushroom. Give them a good shake to remove any dirt. Separate the mushroom from clumps, and wash them with water. Set aside.

2. Heat up butter in a non-stick pan. Add in onion and stir fry until translucent. Add in mushrooms and stir fry for about 2 minutes. Mix them evenly and remove from heat. 

3. In a bowl, beat eggs. Mix in mayonnaise, milk, soy sauce and salt and pepper.

4. In a heat proof dish, put in the mushroom-onion stir fry. Then, pour the egg mixture on top of mushroom-onion.

5. Top with shredded cheese and bake in an oven for 10 to 15 minutes at 170 degrees Celsius. Or until cheese turned brown, and egg mixture is no longer runny.

6. Serve hot.

Chicken Burger with Mushroom Ragout and Sauteed Capsicum


I made this burger and thought it would go really good with mushroom ragout. The patties were made of ground chicken, chopped onion, basil, ground pepper and salt. It was topped with mushroom ragout, cheddar slice and chicken patties (though beef patties would make a better match with the ragout). Then, I sauteed some capsicum and served them as side dishes.

Mushroom Ragout


I found this recipe of mushroom ragout from foodnetwork. I've never made these before. But, the recipe seemed really easy. So, I decided to give it a try. I altered the recipe a bit. I used button mushroom (the original recipe called for shitake, portobello and oyster mushroom). And I substituted wine with chicken stock.

Pan Fried Chicken with Mushroom


I made this for my sister the other day. I didn't have much time to prepare anything else. And it almost time for her to break fast. So, I made this. Pan Fried Chicken with sauteed mushroom. It was really simple too.

Thinly slice the chicken. And soak them in lemon juice for an hour. Pat them dry. Season them with salt and pepper. Coat them with flour, egg and breadcrumb and pan fried them with little oil - as simple as that!

If you been reading this blog for a while, you would know that my sister didn't like vegetables very much. I think, mushroom was the only vegetable she ate. So I sauteed some diced white button mushroom with pepper and salt.

Spaghetti Olio with Enoki Mushroom


I bought a few packets of Enoki mushrooms with absolutely no idea on how to cook them. I browsed on the net, and most of them said Enoki Mushroom would be great eaten raw. There are many recipes of Enoki being used in salads. There are some recipes where the mushroom was added a few second before the fire was turned off. So, I decided to try cooking the mushroom with spaghetti. 

I added in some dried chillies for spiciness, topped them with stripped seaweed, and sprinkled some generous amounts of Parmesan just before serving. Looking at the final product, I can't really differentiate the spaghetti and the mushrooms! I'm still looking for more recipes with Enoki. If you have some great idea on how to use them, please do not hesitate to share them with me :)
